Lemon-Dill Pollock with Sautéed Fennel

A tasty combination of these wonderful ingredients, which makes a lite healthy meal.

Ingredients:
Fish
4 Pollock fillets
1/3 cup minced fresh dill
1/2 cup fresh lemon juice
4 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, minced

Fennel salad
1 fennel bulb
1 small onion
1/3 cup minced fresh dill
1/2 cup fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
4 spoons yogurt
Tabasco or Chili flakes

Preparation:
Fish
– combine all ingredients (from fish section)
– marinate fish with the mix above for 20 mins in a plastic bag in refrigerator, then discard marinade when the fish is grilled on a grill rack
or
– place fish on a broiler pan, then spread the marinade on top.
– cook for 4 minutes on each side or until fish flakes easily when tested with a fork

Fennel salad
– chop up the fennel bulb, along with some of those feathery fronds, and the onion
– toss with olive oil, lemon juice, fresh dill, Tabasco, salt and pepper and sautée in a pan so they’re cooked but still crunchy

Serve with yogurt, spread over the fish and fennel
