Spicy Eggplants with String Beans

Ingredients (time prep 15′ | cook 30′ ):

  • 250-300g (1 big / 2 small) eggplants
  • 250g green beans
  • ~ 3/4 cups ginger
  • ~ 3/4 cups garlic
  • 2 tsp hot chili sauce
  • 3+ dried red hot chili
  • 2 tsp honey
  • 4 tbsp olive/canola oil
  • handful of scallion
  • soy sauce


  • remove both tips of the green beans and cut them to preferred size; salt them and let them sit
  • cut the eggplants into the desired size, probably to match the string beans, into stripes; salt and let then sit
  • rinse off the beans and the eggplants
  • steam the beans until well done
  • steam the eggplants until almost done
  • mince ginger, garlic and dried chili; sautée for 1-2 mins, until the garlic releases its flavor and before the ginger starts getting brownish, add the eggplants and the beans, stir until well mixed and cooked
  • add soy sauce according to taste and finally the scallions
